Step 1
Make peppercorn oil. Step 2
Make oil splash peppers. Take a few dried chili noodles, add a small amount of salt, thirteen spices, and peppercorn powder and stir well. Heat oil in the pot, also heat to about 70°C pour in the hot sauce noodles, fry the spicy sauce noodles, pay attention to controlling the oil temperature and the amount of oil, the oil splash should not be too thick or too thin, for subsequent mixing of cold dishes.
Step 3
Cold carrots. Shred the carrots, blanch them slightly in boiling water (not too long, so as not to soften the carrots and affect the taste), remove them and put them in cold water, and drain. Put the drained carrots into the mixing bowl, add shredded green onions, shredded green peppers, add shredded onions according to personal taste, add vinegar, light soy sauce, salt, chicken essence, chili oil, oil splashed peppers, sesame oil to taste. Step 4
Shredded potatoes in cold salad. Same as shredded carrots. Shred the potatoes, blanch them slightly in boiling water (not too long, so as not to soften the potatoes and affect the taste), remove them and put them in cold water, and drain. Put the drained shredded potatoes into the mixing bowl, add shredded green onions, shredded green peppers, shredded onions according to personal taste, add vinegar, light soy sauce, salt, chicken essence, chili oil, oil chili, sesame oil to taste. Stir well.
Step 5
Cold bean curd skin. The method is the same as above. Shred the oil bean skin (which should have been cooked) and do not blanch it in boiling water, otherwise it will be too soft. Put the oil bean skin shreds into the vegetable bowl, add shredded green onions, shredded green peppers, and add shredded onions according to personal taste, add vinegar, light soy sauce, salt, chicken essence, chili oil, oil splashed peppers, and sesame oil to taste. Stir well.
Step 6
Baked buns. Bake the white Ji buns/gangzi buns/sesame cakes in a pan or electric baking pan over low heat until crispy and fragrant.
Step 7
