Step 1
Cut the tofu into small cubes of about 1 cm, chop the onion, ginger and garlic and set aside.

After stir-frying the bean paste for a while, pour in the tofu and stir-fry gently.

Add water and cook over high heat for 3 minutes, add cooking wine, light soy sauce, and pepper and cook together, stirring occasionally to prevent sticking to the pan.
Step 5
When the water is basically boiled, add the starch mixed with water, and the ratio of starch to water is 1:3.
Step 6
Stir gently and turn off the heat when the soup becomes viscous.
Step 7
Simple mapo tofu is ready.
