How to make paella
Step 1
The first step is to make shrimp soup, wash the prawns, remove the head and shell, and set aside the shrimp.

Put the shrimp heads and shells in the oven (oven temperature 180 degrees) and bake for 15-20 minutes

When grilling shrimp heads, stir-fry onions, carrots, and celery until fragrant and set aside.

Put 10g of butter in the pot, a little vegetable oil (to prevent the butter from becoming mushy), add the flattened garlic cloves and stir-fry until fragrant.

Add rice and stir-fry translucent, add 330 shrimp soup, season and boil.

Put the fried shrimp on one side of the pan, put 5g of butter on the other side, add minced garlic and sauté until fragrant, add salt and black pepper to taste. The temperature in the pot rises, add a little white wine to the side of the pot to remove the fishy smell, and remove from the pot.

Heat the empty pot, add 100g of clams when it is very hot, cover immediately, then add white wine and foam over the clams, cover with the lid. Just boil the clams and open them. Leftover clam water can be added to the shrimp soup (or left out)

Take out the roasted rice when it’s almost time, turn it over, and bake it for three minutes. (Paella is sandwiched raw, if you don’t like it too raw, bake it for a while)

After the rice is cooked, put the seafood on top, cut the lemon into cubes and decorate with basil, and let’s go.
