How to make paella

Step 1

The first step is to make shrimp soup, wash the prawns, remove the head and shell, and set aside the shrimp.

Step 2

Put the shrimp heads and shells in the oven (oven temperature 180 degrees) and bake for 15-20 minutes

Step 3

When grilling shrimp heads, stir-fry onions, carrots, and celery until fragrant and set aside.

Step 4

Put 10g of butter in the pot, a little vegetable oil (to prevent the butter from becoming mushy), add the flattened garlic cloves and stir-fry until fragrant.

Add the grilled shrimp heads

Pour in ouzo to remove the fishy smell when the temperature in the pot is very high.

After the wine evaporates, add the fried green onions, celery, and carrots 10g of tomato paste and stir-fry until fragrant to remove the acidity of the tomato paste.

Add water (or vegetable broth) The ratio of shrimp heads to water is 1:8 Add an appropriate amount of thyme, bay leaves, black pepper, bring to a boil over high heat to remove the foam, change to low heat and cook for 30 minutes (do not cover)

After 30 minutes, turn off the heat, break the shrimp heads with a cooking stick, and filter. Add salt to taste Add saffron and set aside.

Put a little oil in the pot, add diced onions and diced three-color peppers (I didn’t put diced bell peppers) and stir-fry until fragrant Add minced garlic and stir-fry until fragrant Add 5g of tomato paste and stir-fry until fragrant to remove acid.

Add rice and stir-fry translucent, add 330 shrimp soup, season and boil.

Wrap the pan tightly in foil and place it in the oven for 40 minutes.

Fry shrimp: Put a little oil in the pan, fry until golden brown and turn over

Put the fried shrimp on one side of the pan, put 5g of butter on the other side, add minced garlic and sauté until fragrant, add salt and black pepper to taste. The temperature in the pot rises, add a little white wine to the side of the pot to remove the fishy smell, and remove from the pot.

Step 15

Squid is the same as shrimp.

The clams are not put this time, write about the method, add if you like it, and add clams to take pictures more beautifully. Heat the empty pot, add 100g of clams when it is very hot, cover immediately, then add white wine and foam over the clams, cover with the lid. Just boil the clams and open them. Leftover clam water can be added to the shrimp soup (or left out)

Take out the roasted rice when it’s almost time, turn it over, and bake it for three minutes. (Paella is sandwiched raw, if you don’t like it too raw, bake it for a while)

After the rice is cooked, put the seafood on top, cut the lemon into cubes and decorate with basil, and let’s go.
