Okinawan cuisine – fried bitter gourd

The method of frying bitter gourd

Step 1

Half a bitter gourd is scooped out of the seeds (try to remove the white film as much as possible) and cut into thin slices.

Step 2

Add a small spoonful of salt (in addition to the amount of ingredients) and marinate for 15 minutes, then squeeze out the water that oozes out of the bitter gourd.

Step 3

Press a heavy object on top of the northern tofu and let it rest for five minutes to remove excess water.

Step 4

Cut the ham into cubes of about 1cm.

Grind the ginger into powder and strain the ginger juice through a sieve.

Boil a pot of water and add a small spoonful of salt (outside the portion) and a little vegetable oil to the water. After the water boils, add the bitter gourd slices and cook for about 45 seconds.

Remove the bitter gourd and pass it through cold water.

Cooking tips for stir-frying bitter gourd

Ham can be replaced with pork or other meats you like, because I don’t like to eat bitter gourd, so I chose ham, a richer substitute, the mixed taste of wooden fish flower and ham is very appetizing. Ginger juice is not a necessary seasoning, it can be left out, but people who feel cold can take some. Although it is winter, the heating in the north is really good, so I am a little unaccustomed to it, and I will catch a cold if I don’t pay attention. However, I was not used to eating at all, so I still used more ingredients to neutralize the bitterness, which unexpectedly whetted my appetite. The Japanese translation of the name of this dish is messy bitter gourd, which sounds like a name that makes you want to try.
