Mexican Roast Pork Taco | Pure Mexican taste

Speaking of Mexican tacos, Chinese diners are no strangers. Even if you haven’t been to a Mexican restaurant in Mexico or in the country, you must know about KFC’s Mexican Chicken Wrap, which is a modified version of the taco. But Chinese families make their own Mexican tacos, which are still rare. Taco tortillas aren’t the focus of this recipe, and supermarkets have ready-made tacos available. But if you want to make it at home, refer to our homemade crepes for the home version of roast duck, which is the perfect subsistence for tortillas. This time I mainly want to share an authentic taco filling: slow-roasted pork. Made using local Mexican cooking methods, it takes a long time, but the method is not difficult. Ingredients for Mexican roast pork tacos

How to make Mexican roast pork tacos

Step 1

After the pork is cut into pieces, sprinkle an appropriate amount of salt on the pork and rub the pork to spread the salt evenly.

Step 2

In a large metal thick baking sheet or cast iron pan, heat the oil over medium heat. Put the pork cubes in batches and fry each piece of meat until golden brown on all sides. This step will be the most tedious step in the dish, and the next step will be easy.

Step 3

Preheat the oven to 190 degrees. Put all the pork pieces fried in batches with 1 teaspoon cinnamon, 2 teaspoons paprika, 1/2 teaspoon cumin powder, 2 bay leaves, and 5 garlic slices in a cast iron pan, and pour in enough water to cover 2/3 of the meat.

Step 4

Cover the pot and bring the water to a boil. Then put the boiling cast iron pot in the oven with the lid. Bake at 190 degrees for 3.5-4 hours. Open the lid every hour and check it, stir appropriately or add some more water. The roasted pork is so fragrant and very crispy. You can take a piece and taste it first.

Step 5

After the pork is ready, mix the chopped purple cabbage, orange juice, grated orange zest, olive oil, and salt, and stir well to make purple cabbage salad. Then bake the tortillas or homemade dough over an open flame for 20-30 seconds until a local focus of burn is created. Top with slow-roasted pork, purple cabbage salad, avocado, cilantro, Mexican soft cheese, and a squeeze of lime juice.
