How to make Mexican-style pork ribs

Step 1

Garlic and small shallots cut into small pieces.

Step 2

Put coriander seeds, cumin, black peppercorns, and fennel seeds in a pan and stir-fry over medium-low heat until fragrant.

Step 3

The sautéed spices are crushed in a grinder with the rest of the ingredients to get the marinated spices.

Step 4

Clean the bone-in pork ribs, dry the water, and remove excess fat. Spread the pickled spices evenly, put in a vacuum bag, add ginger, and vacuum. Put in the refrigerator and marinate for 8 hours.

Step 5

Use the thermostat at 78 degrees for 6 hours. Ready to eat.
