How to make Mexican bread
Step 1
Put all the ingredients in the main dough, except for butter and salt, into the chef machine

After the dough is formed into a ball, add butter and salt and continue to knead. Knead the dough, knead out the glove film, and stop kneading the dough after the film comes out.

Cover the dough with plastic wrap and leave to rise in a warm place for 1 hour

Until 2.5 times larger, fermentation is good. Gently press on the exhaust.

After 15 minutes, press and roll into a circle, arrange it in a baking dish and prepare for 2 fermentations. I made two plates, I used double the amount. Prepare for the second fermentation. Put the second fermentation into the oven, put a bowl of hot water in the oven, keep the humidity at 85%, and ferment for 1 hour.

Prepare the Mexican batter when fermenting. Take 40g of butter for Mexican batter, put it on the chopping board and rub it with your hands, add powdered sugar, continue to rub it, and pour in the egg mixture several times to let the batter absorb all the egg liquid. The photo above is from left to right. The batter is fluffy at this time. Pour in the flour again, fold it with your hands and scraper, and mix evenly. Use a spatula to put all the batter into the piping bag.

After the dough is ready, take it out of the oven, cut a small opening for the piping bag head (note that the cut mouth is about 3mm) and squeeze the Mexican paste into the bread in a circular motion.
