Cai Mang’s approach

Step 1

Wash and chop the leeks, shred the carrots and fungus, soak the vermicelli into sections, pour a little oil and dark soy sauce, stir well, and scramble the eggs

Step 2

Put the leeks and carrots into a basin, add a little cooking oil, stir well to lock in the water, then add other ingredients in turn, and finally add an appropriate amount of dried shrimp, salt, thirteen spices, black pepper, and chicken essence and stir well

Step 3

Add a little salt to the flour, mix the flour with cold water and noodles to form a hard dough, divide it into several doses after waking up for half an hour, dry it into a thin large noodle sheet, spread the prepared filling on it, then roll it up, seal it on both sides and push it to the middle

Step 4

Steam for 15 minutes
