Japanese cuisine “Kinpei” Kimpira

My hometown of Xuzhou is rich in burdock, and there are many kinds of burdock pickles, but I didn’t like to eat burdock since I was a child, until I came to Japan to study, I accidentally ate a Japanese dish called “Jinping”, I was surprised that burdock can be fried and eaten like this, and I also liked this dish, sweet and spicy, very suitable for drinking or eating.

Ingredients for stir-frying burdock

burdockHalf a root carrot2/3 root
Dried red peppersOne Ripe sesame seeds2 scoops
sugar20g Flavor30ml
Japanese thick soy sauce15ml Broth powder3g
sesame oil15ml

How to fry burdock

Step 1

Prepare the ingredients, my dried red peppers are all cut, just use them directly, if the peppers are spicy, half of them are enough.

Step 2

Wash the burdock, do not peel it, cut it into shreds, put some salt in hot water, blanch the cut burdock in water to remove the earthy smell.

Step 3

Peel the carrots, shred them, and blanch the shredded burdock and set aside.

Step 4

Pour sesame oil into the pot, don’t heat the pot too hot, add dried red peppers, medium heat, high heat is easy to burn off the peppers.

Step 5

Pour in the burdock and carrots and stir-fry until broken.

Step 6

Add sugar first, fry for about a minute, and then add other seasonings.

Step 7

Stir-fry until the soup is gone, add two spoons of sesame seeds, and stir-fry evenly.

Step 8

After serving, you can sprinkle some sesame seeds on the surface to make it more beautiful.
