Ingredients for oden

How to cook oden

Step 1

Eggs are boiled and peeled.

Step 2

The radish is cut into pieces of about 1.5-2cm.

Then draw a cross on the front and back to make it easier to taste.

This is Japanese thick fried tofu.

Cut the triangle and set aside.

Step 6

Konjac first draws a flower knife on the front and back.

Fish and bamboo wheels are cut diagonally into two parts.

Chop the chicken thighs together with the tendons and mix with seasonings and starch.

Blanch in hot water.

Put the meatballs and fish bamboo wheels together for later use.

This is dashi powder.

Put all the ingredients except the fish chikuwa and meatballs in the pot.

Add all the seasonings needed for the soup and bring to a boil over high heat.

If there is foam, use a colander to skim it off.

Simmer over medium-low heat for an hour. Then turn off the heat and simmer for at least two hours.

Then pour in the fish bamboo wheel and meatballs, bring to a boil over high heat, and then simmer for about 30 minutes.

For miso sauce, just mix the sugar wine miso well. Some people also like to eat it with yellow mustard, but my family generally doesn’t use it.

Cooking tips for oden

Cooking oden, you can use high heat when the ingredients are not cooked at the beginning, but that is, the first 10 minutes or so, after which it must not be allowed to boil, the focus is to simmer the ingredients over low heat to taste, and the shape is not scattered, if the fire is high, it is easy to boil it to rot.
