Kaju Katli [Indian Cashew Slices]
Tomorrow is Diwali (Diwali), India’s big festival, and traditionally many small desserts are made to give to relatives and friends. In previous years, we all bought something. It just so happened that my work was relatively free these days, so I planned to make a few small desserts to celebrate. This is the first dessert of the year and my husband’s favorite, called Kaju Katli, which is made with cashew nuts, very sweet, with a strong cashew nut aroma, very delicious. Some instructions about Diwali are copied from the Internet: Deepavali is a festival celebrated by Jainism, Hinduism and Sikhism to “drive away darkness with light and overcome evil with good”, and is held every year on the 15th full moon day in August (Scorpio Palace) of the Hindu calendar (i.e. late October or early November of the Gregorian calendar)[1][2]. Some Buddhist adherents also celebrate this holiday.
Indian cashew slices
Step 1
Grind the cashews with corn flour and 1/3 of the sugar into powder with a coffee grinder or blender, the finer the better.
Step 2
Grind/pound cardamom seeds into powder.
Step 3
Mix cashew nut powder, cardamom seed powder and salt.
Step 4
Bring the remaining sugar and 1/4 cup water to a boil in a pot and cook until bubbles are formed.
Step 5
Before turning into caramel, quickly pour in the cashew nut powder and mix well.
Step 6
Continue to cook over medium heat for 5-6 minutes, gradually thickening, when large bubbles appear, turn off the heat and cool
Step 7
After not burning your hands, you can shovel it out and put it on a plate with a thin layer of cooking oil and rub until the surface is smooth. Then flatten and roll out with a rolling pin to a thickness of 2-3mm.
Step 8
Cut into a diamond shape before it hardens.
Step 9
It can also be decorated with silver foil.
Step 10
Cut it and wait overnight, and when it hardens, it can be boxed and sealed for storage.
