Indian cuisine [wild amaranth potato]
A bunch of wild amaranth grew in the front yard of the house many years ago, because we don’t use pesticides, so I will pull them out to make noodles to eat. Later, for some reason, wild amaranth grew more and more, and at least a few crops could be eaten during midsummer. Today I pulled out a handful of particularly tender wild amaranth to make this dish, and it was very delicious with multigrain dough.
How to make wild amaranth potatoes
Step 1
Pick and wash the wild amaranth in the yard.
Step 2
Pick the leaves and drain them for later use. Dice the onion and tomato. Pepper and garlic minced.
Step 3
Peel the potatoes and cut them into hob pieces, and fry them in an oil pan or air fryer until golden brown.
Step 4
Heat three tablespoons of oil in a pot, first sauté the cumin until fragrant, add minced garlic, minced chili pepper and onion and stir-fry until fragrant.
Step 5
Add diced tomatoes and spices and stir-fry until soft, then add salt.
Step 6
Stir-fry the potato cubes in the pot
Step 7
Then add amaranth and stir-fry until it is broken.
Step 8
Eat with flapjacks and yogurt.
