Indian Healthy Vegetable Curry Recipe

Step 1

Heat olive oil over high heat

Step 2

Chop the ginger and garlic and add the hot oil

Step 3

Stir-fry and add the chopped onion

Step 4

Add curry powder, salt, fennel, star anise, chopped tomatoes

Step 5

Add potato cubes, cauliflower, mushrooms and carrots

Step 6

Add water to taste

Step 7

Add an appropriate amount of curry powder and salt

Step 8

Reduce heat to low and cover the pot

Step 9

After 20 minutes, let the soup become thick and come out of the pot
