North Indian style fried rice
I remember the first time I ate fried rice in India was in the UK, and the Indian landlord made me a rice called Biryani, mixed with chicken, spices, onions, etc., and its aroma was irresistible. In India, rice is not just a staple food, but can be combined with spices, vegetables, and meat to create different flavors of main dishes. Today’s fried rice is a kind of Pilau Rice. Pilau Rice has many recipes, just like Chinese fried rice has many different recipes, it is more varied and special than Biryani. The biggest difference between it and ordinary risotto, such as risotto, is the order of watering. Pilau Rice is to release water first, then rice, which requires just the right amount of water, which is more difficult, but at the same time, the aroma of the water and the ingredients is fully integrated, and the flavor of the rice is also more sufficient.
How to make biryani
Step 1
Cut the onion into thin slices.
Step 2
Prepare the desired spices and place them on a plate.
Step 3
The peas are taken out to thaw, and the rice is soaked in water for 20 minutes.
Step 4
Destem the coriander, chop the leaves, and pick the leaves from the mint. This step is not to cut the mint first, otherwise the mint essence will evaporate and it will be useless.
Step 5
Place the butter in a pan and melt over medium heat.
Step 6
Add the prepared spices.
Step 7
When the aroma of spices begins to come out, you can see that the cardamom begins to burst, so add the onion.
Step 8
Fry the onion until golden brown.
Step 9
Add the peas and continue to sauté for 2 minutes.
Step 10
Add 400ml of water, salt, then cover and bring to a boil.
Step 11
Strain the water from the rice, put the rice in a pot, cover and cook for 5 minutes.
Step 12
During cooking, mint leaves can be chopped.
Step 13
Cook until the water starts to dry, and there are small holes in the rice.
Step 14
Add the coriander and mint leaves and simmer over low heat for 5 minutes.
Step 15
Stir well and serve.
Step 16
It is best to use long japonica rice for rice, so that the rice will be drier and more delicious.
