Step 1

All ingredients are ready, sugar, gluten and all-purpose flour are put into the bread machine, the yeast is washed separately with warm water, stirred well, then the sugar is avoided, and the bread machine is stirred. After stirring in the bread machine for 10 minutes, take it out and knead it with your hands while adding salt. Knead until smooth

Step 2

Divide the dough into small doughs of 75g to 80g, knead it finely on both sides and slightly thick in the middle and place it according to the shape. Freeze in the refrigerator for half an hour, soak it in alkaline water for ease and take it out

Step 3

50 grams of alkaline water and 1000 grams of water, remember to wear gloves, soak in the water for about 15 seconds to take it out, and then cut the bag in the middle thick place and sprinkle with sea salt.

Step 4

Adjust the oven to 200 degrees, put the upper and lower tubes at the same temperature, and bake in the bread for 20 minutes
