This week, German alkaline bread is made, also called Prejie. This bread has a unique appearance and flavor because it is dipped in a layer of alkaline water before baking.

Step 1

But this alkali uses baking alkali, which is very burning, and you must wear gloves when you touch it. That is, there will be no beautiful bright light on the surface, and there will be slight differences in taste. You can also try edible alkaline noodles or baking soda, the amount is the same as the recipe I gave.

The ingredients of the dough are mixed and kneaded until the expansion stage. It is recommended to use a chef machine or hand knead, this dough has less water, the bread machine power is small, and it is easy to damage the bread machine. You can also mix other ingredients other than yeast a day in advance, then cover with plastic wrap and put it in the refrigerator, let the dough stand by itself to produce gluten, and then add yeast and knead it well by hand the next day.

Divide it into six parts. Cover with plastic wrap and let loose for 15 minutes.

Put the dough in the oven, put a bowl of hot water underneath, and the water temperature is about 40 degrees. Ferment at 28 degrees for 25-30 minutes.

Prepare alkaline water for fermentation. Pour baking alkali into cold water and mix well. I mixed it well and covered it with a lid, I was afraid that my cat would come over and smell it, and if there are children and small animals at home, pay attention to it, don’t let them touch it.

After the dough is fermented, put it in the refrigerator and freeze for about 15 minutes.

When the dough is frozen, take it out, dip it in alkaline water and place it on a baking sheet lined with oilcloth. It is recommended to use oilcloth. This alkaline water is very strong, lined with oil paper, and there is a hole in the oil paper after baking, and the baking sheet is also burned. There is a black spot.

Let it dry a little, and when the surface is not particularly wet and sticky, use a knife to cut the coarse place, and then sprinkle coarse sea salt.
