Okinawan cuisine – fried bitter gourd
The dishes that appeared in the instant noodle show “Wakako Sake”, Mrs. Miyuki’s dubbing is so cute. Although it is an instant noodle show, the time of one episode is only enough to hold one’s breath ╮(╯▽╰)╭
The method of frying bitter gourd
Step 1
Half a bitter gourd is scooped out of the seeds (try to remove the white film as much as possible) and cut into thin slices.
Step 2
Add a small spoonful of salt (in addition to the amount of ingredients) and marinate for 15 minutes, then squeeze out the water that oozes out of the bitter gourd.
Step 3
Press a heavy object on top of the northern tofu and let it rest for five minutes to remove excess water.
Step 4
Cut the ham into cubes of about 1cm.
Step 5
Grind the ginger into powder and strain the ginger juice through a sieve.
Step 6
Boil a pot of water and add a small spoonful of salt (outside the portion) and a little vegetable oil to the water. After the water boils, add the bitter gourd slices and cook for about 45 seconds.
Step 7
Remove the bitter gourd and pass it through cold water.
Step 8
Add a little vegetable oil to the pan, break the tofu into small pieces by hand, and fry for a while.
Step 9
Serve until the surface changes color slightly.
Step 10
Add a little vegetable oil to the pan, add the ham cubes and stir-fry.
Step 11
Add the tofu and bitter gourd and stir-fry.
Step 12
Stir-fry until fragrant, then stir the vegetables around, and add a beaten egg in the middle.

Cooking tips for stir-frying bitter gourd
Ham can be replaced with pork or other meats you like, because I don’t like to eat bitter gourd, so I chose ham, a richer substitute, the mixed taste of wooden fish flower and ham is very appetizing. Ginger juice is not a necessary seasoning, you can not add it, but people who feel cold can take some. Although it is winter, the heating in the north is really good, so I am a little unaccustomed to it, and I will catch a cold if I don’t pay attention. However, I am not used to eating at all, but I still use more ingredients to neutralize the bitterness, which is unexpectedly appetizing. The Japanese translation of the Japanese name of this dish is messy bitter gourd, which sounds like a name that makes people want to try.
