Paella

How to make paella
Step 1
Prepare black pepper, bell pepper powder, salt, saffron, rosemary, wine, tomato paste, tomato paste, thyme, bay leaves, about paella seasoning, in fact, traditional paella should be put saffron, the main purpose is dyeing, I happen to have a friend from Spain to bring back this seasoning, its main ingredients are saffron powder and plant color agent, which can dye your paella red very appetizing
Step 2
Remove the bones and dice the chicken thighs, wash the squid and remove the visceral tissues and cut them into shreds, brush other seafood with a small brush, and dice the vegetables

Remove the oil from the pan, pour in olive oil, add garlic foam after the oil is hot, and stir-fry until fragrant

Stir-fry and cover the pot, open the lid for 2-3 minutes, add 300ml of water, bring to a boil and remove the seafood, and put the rest of the soup in a container

Add a bag of tomato sauce to the soup, this is our seafood stock, if you have ready-made seafood stock at home, please ignore this step

When the pan is hot, pour in the olive oil, add the onion and garlic and sauté until fragrant, add the chicken and stir-fry, add thyme, rosemary, and bay leaves after the chicken changes color

Except for the peas and limes, pour in all the vegetables that were cut before and stir-fry

Add rice and stir-fry, what I made today is the amount of 6 people, weighing 500g of rice. You can decide the amount of rice according to the number of people eating at your home and the amount of rice, generally 2-3 people 250g rice, the choice of rice should pay special attention, you can buy special paella rice for purchase, or our domestic pearl rice, this rice is characterized by relatively short particles

After mixing well, add the wine and let the alcohol evaporate

Add seafood stock, tomato paste, saffron in turn, mix well and season with pepper, salt, and bell pepper powder, and never turn the pot again

Simmer over low heat for about 15 minutes, and add seafood when the soup is almost gone

Simmer for another 10 minutes, the soup is dry, the rice is cooked, squeeze some lemon juice, and then garnish with lemon wedges to get out of the pot
